Lemon meringue pie recipe: each slice is a treat

Ingredients:
for the shortcrust pastry:
250g all-purpose flour
135g cold butter
70g sugar
1 egg
pinch of salt
vanilla extract

Lemon curd:
zest of 2 lemons
juice of 2 lemons (100ml)
180g sugar
2 eggs
3 egg yolks
100g butter
30g cornstarch
Italian meringue:
3 egg whites (100g)
180g sugar
50ml water
Directions:
Shortcrust pastry: in a bowl put the flour, salt and butter and crush. Add the sugar, egg and vanilla and mix until smooth. Then put in the fridge for 1 hour.
Curd: grate the peel, squeeze the lemon and filter. In a bowl put 2 whole eggs and 3 egg yolks. Mix with sugar and starch. Then melt the butter in the sugar and add the juice and lemon peel. When it will almost come to a boil add the mixture with the eggs. Stir until a thick cream is obtained.
Roll out the pastry, makes holes on the bottom and bake in the oven for 25 minutes at 180°C (360°F).

Meringue: In a small saucepan, melt the sugar in the water. When it comes to a boil, whisk the egg whites with the other half of the sugar. Add the syrup and continue to whisk.
Let cool and place the meringue in the pastry bag.
Fill the pie with the lemon curd and then add the meringue. Toast the meringue using a blow torch or put in the grill mode oven for 10 minutes.
