Pumpkin fritters: you won’t be able to eat only one!

Pumpkin fritters are one of those dishes where you’re not really sure whether to eat them as a side or a snack. They are THAT good! They can easily be served as a side dish to a meaty main, or with a few customizations, you can serve it as a sweet snack or dessert too! To make it, you will need flour, grated pumpkin, eggs, olive oil, parmesan cheese, and oil for frying. You simply mix the ingredients together, and fry spoonsful of batter until golden and puffy. The result? Crispy pumpkin fritters that are light and fluffy on the inside, and crunchy on the outside! You won’t be able to stop at one!

Pumpkin Fritters Ingredients

  • Squash – use a firm squash like butternut
  • Eggs – eggs act as a binder
  • Parmesan cheese – adds flavor
  • Flour – creates a batter for the fritters
  • Oil for frying – use a neutral oil

How to make Pumpkin Fritters

Grate the squash over a sieve set on a mixing bowl and allow it to drain (you want to remove as much liquid as possible). Use another clean bowl to mix the salt, eggs, oil, Parmesan cheese, water, and flour. Add the drained squash to the flour mixture, and add the baking powder. Mix to combine.

Fry until golden.

Can The Pumpkin Fritters Be Baked Instead of Fried?

While we do enjoy baking where possible, it’s not recommended for this recipe. The batter is too thin and won’t rise in the oven as it will in the oil.

Make sure to use a neutral oil suitable for frying at higher temperatures like canola oil, peanut oil, sunflower oil, or corn oil.

Don’t make your oil too hot (it should be about 350°F), otherwise, the pumpkin fritters will burn before the batter is cooked through completely.

To turn the fritters into a sweet snack, omit the parmesan cheese in the batter, but add a tablespoon of brown sugar. Once fried, dust the fritters with cinnamon sugar or a cream cheese glaze. Make your own cream cheese glaze by mixing 4 ounces of cream cheese, 1/2 cup confectioners' sugar (or powdered sugar), sifted 1 teaspoon pure vanilla extract, and 3 to 4 tablespoons milk.

Using a butternut squash with a long neck will make grating easier.

How to Store Pumpkin Fritters

Leftovers can be stored in the fridge for up to 3 days. Reheat in the oven or Airfryer to make them crispy again!

What To Serve with Pumpkin Fritters

Serve the pumpkin fritters as a side with a yogurt dipping sauce.

If you’re enjoying them as a dessert, serve them with vanilla ice cream!

Instructions

Grate the squash and remove as much liquid as possible.

In a clean bowl, mix together the eggs, salt, oil, Parmesan cheese, water, and flour.

Add the squash to the flour mixture and mix.

Add the baking powder and mix until the batter is nice and thick.

Drop a spoonful of the batter in hot oil and let it fry for about 5 minutes. 

Serve hot.
