EGGS AND ZUCCHINI IN A PAN: an easy and quick vegetarian dinner saver!

INGREDIENTS
3 zucchini
2 shallots
4 eggs
Olive oil, as needed
Salt and pepper, to taste
A few mint leaves
 
METHOD
1. Grate the zucchini.
2. In a pan, heat a drizzle of olive oil and add the chopped shallots.
3. Cook over medium heat for a few minutes, stirring often.
4. Add the grated zucchini, a pinch of salt, and a pinch of pepper.
5. Cook over medium heat for about 10 minutes, stirring occasionally.
6. Create 4 small wells in the zucchini using the back of a spoon, then crack the eggs into them and season with salt and pepper.
7. Cover with a lid and cook over low heat for a few minutes, making sure the yolks remain soft.
8. Serve garnished with a few mint leaves.
