OMELETTE WITH PEPPERS AND CHEESE: if you want a quick and tasty dinner, you have to make it now!

INGREDIENTS
4 eggs
Chives
Basil
15g Pecorino cheese
Salt
Extra virgin olive oil
70g scamorza cheese
70g grilled bell peppers
For garnish:
Basil
METHOD
1. In a bowl, whisk the eggs with salt, Pecorino cheese, chopped chives, and basil.
2. Heat a drizzle of extra virgin olive oil in a non-stick pan. Pour in the egg mixture and cook over medium-low heat for about 7 minutes, covering with a lid, until the base is set.
3. Arrange the grilled peppers and slices of scamorza over one half of the omelette.
4. Fold the omelette in half and cook for another minute, until the cheese has melted.
5. Slide onto a plate, garnish with basil, and serve warm.
