Eggplant roll: the recipe to make it extra tasty with no frying needed

Ingredients:
2 eggplants (700 g)
Olive oil
1 onion
1 bell pepper
350 g of minced meat
2 garlic cloves
Cumin, salt, pepper, paprika
200 g of tomato sauce
100 g of water
Fresh parsley
1 tbsp of tomato paste
120 g of grated mozzarella
Olive oil
Salt and pepper
70 g of grated cheese
1 mozzarella
Directions:
1. Slice eggplants, then soak them in salted water for 10-15 minutes.
2. Sautee some diced onion and bell pepper in a pan with olive oil. Then add minced meat.
3. Season with garlic, salt, pepper, cumin, paprika and ginger.
4. Pour in tomato sauce, water and tomato paste. Let simmer for 25 minutes.
5. Sprinkle some mozzarella onto a baking paper sheet, then lay out eggplant slices.
6. Brush with olive oil, salt and pepper.
7. Bake at 180° for 20-25 minutes.
8. Now fill with the meat mixture, mozzarella cheese and grated cheese.
9. Now roll up, then brush with tomato sauce and cover with mozzarella slices.
10. Bake again for 20 minutes.
