Baked zucchini and onion omelette: you only need a few minutes for a simple and tasty dish!

INGREDIENTS
3 zucchini
1 onion
Salt
Pepper
Olive oil
3 eggs
40g (1/4 cup) of parmesan
15g (1/4 cup) of breadcrumbs
120g of cheese

METHOD
1. Cut the zucchini and onion and transfer to the bowl. Season with salt and pepper and add a drizzle of olive oil. Mix to combine.
2. Pour the zucchini and onion into the baking tray covered with parchment paper and transfer to the oven. Bake at 180°C/360°F for 20 minutes.
3. Transfer baked zucchini and onion to the bowl. Add the parmesan and breadcrumbs and mix to combine.
4. Pour one-half of the mixture into the baking dish and level it well. Arrange the cheese and cover with another half of the mixture.
5. Transfer to the oven and bake at 180°C/360°F for 20 minutes. Serve the omelet on a serving dish and cut a slice.
