Jam biscuits: quick and super delicious!

INGREDIENTS
2 eggs
5ml (1 tsp) of vanilla extract
130g (⅔ cup) of sugar
110ml (⅓ cup + 1 tbsp) of vegetable oil
320g (2 cups) of all-purpose flour
8g (2 tsp) of baking powder
A pinch of salt
Jam
Shredded coconut
METHOD
1. Preheat the oven to 180C/350F.
2. Whisk eggs with vanilla, sugar, and vegetable oil. Mix flour with baking powder and salt.
3. Pour liquids into the flour mixture. Mix until smooth cookie dough forms.
4. Divide into 15-20 portions, roll each into a ball, then form an oval and make an indent in the center. Bake for 20 minutes. Let cool down.
5. Brush apricot jam over each cookie, cover with shredded coconut, and fill with more jam.
