Sweet brioche flowers: soft and delicious!
published on 5 October, 2023 at 13:00
INGREDIENTS
400g (3 1/4 cups) of all-purpose flour
200ml (¾ cup) of lukewarm water
7g of dry yeast
3g (1 tsp) of salt
40g (3 tbsp) of soft butter
30g (2 ½ tbsp) of sugar
250g (½ cup) of custard
Cream for brushing
Powdered sugar
METHOD
1. Preheat the oven to 180°C/350°F.
2. In a small bowl whisk together flour and salt. In another bowl combine warm water with sugar and yeast. Add flour to the liquids and stir. Mix in butter, and knead the dough for 10 minutes.
3. Form the dough into a ball, cover with plastic, and set aside for 2 hours or until doubled in size.
4. Roll the dough out into 2 cm thick rectangles, cut out 4 cm circles, and fold each in half two times, to form triangle petals as shown in the video. Gather 5 petals together to make a flower and place it on a parchment-covered baking sheet. Set aside for 30 minutes.
5. Brush each flower with some cream and put a dollop of custard in the middle. Bake for 18-20 minutes. Serve dusted with powdered sugar.
