Pakora: the indian fritters with a spicy and unique taste!

INGREDIENTS
For Pakora:
150g (1 cup) all purpose flour
20g (2 tbsp) rice flour
125ml (1/2 cup) yogurt
3g (1/2 tsp) baking soda
4g (1 tsp) sea salt
3g (1 tsp) chili flakes
2g (1 tsp) cumin seeds
1/2 red onion, chopped
1/4 red bell pepper, chopped
1 green chili, chopped
Garlic, chopped
5g (3 tbsp) cilantro, chopped
125ml (1/2 cup) water
Vegetable oil (for frying)
For chutney (optional):
1 garlic clove
1 green chili
small bunch cilantro
15ml (1 tbsp) apple cider vinegar
15ml (1 tbsp) lemon juice
2g (1/2 tsp) sea salt
30ml (2 tbsp) water
3g (1 tsp) chili flakes
30g (2 tbsp) tomato puree
METHOD
- Chop half of the onion, bell pepper, green chili, garlic cloves and fresh cilantro. Set aside.
- In a bowl combine all-purpose flour, rice flour, yogurt, baking soda, chili flakes, cumin and chopped vegetables. Season with sea salt and mix well adding water gradually to obtain pakora batter. Let rest for 15 minutes.
- Meanwhile, prepare chutney (optional): Place all chutney ingredients except tomato puree and chili flakes into the food processor and process until blended. Pour the received mixture into the bowl with tomato puree, add chili flakes and stir to combine.
- Heat oil in a pan over medium heat. Add several spoons of batter to the hot oil and fry for about 4 mins until golden and crispy. Repeat, frying the remaining mixture in batches.
- Arrange pakora and chutney (optional) on a platter and serve immediately.
