published on 28 October, 2022 at 20:55
INGREDIENTS
50ml (3/4 cup) of water
7g of fresh yeast
5g (1 tsp) of sugar
250g (2 cups) of all-purpose flour
5g (1 tsp) of salt
14ml (1 tbsp) of extra virgin olive oil
Olive oil
Oil for frying
For stuffing:
Tomato sauce
Mozzarella
Baked ham
METHOD
1. In a small bowl add the water, yeast, and sugar and mix until sugar and yeast dissolve.
2. In another big bowl add the flour and pour the prepared yeast mixture and mix. Add the salt, and extra virgin olive oil and mix until all is well combined.
3. When the dough starts to form, knead it with your hands until it becomes smooth. Cover with cling film and let it rest for 30 minutes.
4. After 30 minutes knead the dough couple of minutes and transfer it to the bowl, cover it with cling film and let it rise for 2-3 hours, or until is double in volume.
5. Split the dough into 4 parts and form the balls. Transfer the balls to the plate, cover them with a cloth, and let them rise for 1 hour, or until they are double in volume.
6. After time has elapsed roll out each ball with the rolling pin and rub olive oil into the dough with your hands and fold the dough in half.
7. Transfer them to the pan with hot oil and fry until they are golden brown on both sides.
8. Fill each one with tomato sauce, mozzarella, and baked ham and transfer to the oven 180°C/360°F for 5 minutes or until mozzarella is melted.
