How to make a delicious veggie risotto in 40 minutes in the oven!

A one-pot risotto you don't need to stand over for half an hour? Got to be a midweek winner!
INGREDIENTS

200g (1 cup) Arborio rice
2 Zucchini
4 potatoes
20-25 cherry tomatoes
2 onions
150ml (4/5 cup) Water
Olive oil
Salt to taste
Pepper to taste
Fresh basil leaves
Grounded cheese
Mozzarella
METHOD
- Cut the onions, zucchinis, potatoes and cherry tomato.
- In casserole dish pour a little olive oil and then put the potatoes, onion and cherry tomato. Add little salt, pepper and a few basil leaves. Put the zucchinis and then add washed arborio rice. Put again the olive oil, salt and pepper. Add grounded cheese and mozzarella. Repeat the same again with vegetables. In the end add a little more cherry tomato and basil leaves.
- Pour the water into dish and cover with lid. Bake at 180C for 30 min. After that, remove the lid and bake for another 5-10 minutes. Serve.
