Lentil nuggets: how to make them extra crispy and flavorful

INGREDIENTS
200g red lentils (soaked for 20 -25 mins)
1-inch chopped ginger
4 cloves chopped garlic
1 cup parsley
½ cup almond flour
Salt
1 tsp garam masala powder
1 tsp cayenne
1 tsp cumin
1 tsp black pepper
Juice of 1 lime
¼ tsp baking soda
1 tsp oil
1 cup grated onion
1 cup grated potato
1 cup grated carrot
1 cup grated cabbage
½ cup cooking oil for frying
 
METHOD
  1. Soak the lentils for 25 minutes. Sauté all the vegetables in a frying pan.
  2. Strain the lentils and pour them into a blender. Add the spices and blend until you have a coarse mixture.
  3. Mix the lentils with the fried vegetables, add baking powder and mix. Form small nuggets and fry.
