Perfect roast chicken: all the secrets to make it tender and juicy!

There's nothing better than a delicious Sunday roast. Here's the best way to get crispy chicken skin!

INGREDIENTS
2 carrots
1 lemon
1 onion
100g butter
1 whole chicken
salt and pepper
3 tbsp olive oil
Mixed dry herbs
Rosemary
 
METHOD
  1. Put carrots and onion in the chicken cavity.
  2. Place two blocks of butter under the chicken skin and also add some herbs.
  3. Sprinkle mixed herbs all over the chicken.
  4. Pour over oil and lemon juice. Add salt and pepper.
  5. Place some slices of lemon and rosemary.
  6. Bake for 70 minutes at 180ºC (356ºC).
