How to open a sea urchin: the quick and easy way

Opening a sea urchin in not easy, but with the right tools you can prepare sushi or sashimi with sea urchin in the right way.
The equipment:
1. Gloves. Ideally, cut resistant gloves should be worn when handling the sea urchin, as they are covered in sharp spikes that can cause injury if you are not careful.
2. A bowl of ice water. This is where the uni is placed after it is scooped out of the sea urchin shell.
3. A pair of spoons. The sea urchin shell can be easily cracked open with two spoons. They can also be opened with kitchen shears.
4. A large wooden cutting board. This is what you will place the sea urchin on while you operate on it.
The first thing to do is open the sea urchin using the spoons, then scoop out the pieces of uni and place it in the bowl of ice water. Clean each piece of uni, so arrange the uni on a plate and let it dry off in the fridge. It can be served with some light soy sauce.
