Fried stuffed olives: perfect both for appetizers and aperitifs

Ingredients:
32 large green olives
100 g of veal
100 g of pork
100 g of chicken meat
1/2 onion
1 heart of celery
1/2 carrot nutmeg
1/2 lemon peel
Crumbled bread crumb
Grated Parmesan cheese
Flour
2-3 eggs
Bread crumbs
Ham
1/2 glass of dry white wine
black pepper
Salt to taste
Preparation:
Prepare all the ingredients and pit the olives. In a pan fry celery, carrots and onions and then add the veal, then the pork and brown. Finally add the chicken. Add salt and pour the wine. Cook for 1 hour. Once cooked, cool the sauce and put it in a bowl and add the nutmeg, breadcrumbs, ham, lemon peel and egg. Mix and mix. Stuff the olives, bread them with flour, eggs and breadcrumbs. Fry in boiling oil.
