Family Sized Baked Scotch Egg

Ingredients:1kg Ground Pork.
375g Breadcrumbs.
20g Parsley.
1 Tbsp Salt
1 Tbsp Pepper
½ Whole nutmeg (grated)
4 Eggs (boiled)
200g Flour.
4 Eggs (beaten)
Instructions:
Boil your eggs for 6 minutes before cooling and peeling.
Mix together the pork, 125g of the breadcrumbs, parsley, salt, pepper and nutmeg to form a sausage mix.
Take 2/3rds of this sausage mix and form a “boat” shape a little longer than 4 eggs.
Place the eggs in the boat and then cover with more sausage mix.
Wrap in cling film and roll to form a large even sausage.
Refrigerate for 2 hours.
Now roll the sausage in the flour, then dip in the beaten egg and finally into the remaining 250g of breadcrumbs.
Bake in the oven at 200°C or 400F for 35-40 minutes.
