Bunless Bacon and Egg Sandwich

Ingredients:

2 Eggs

Cheddar Cheese

1 Avocado

3 Slices Bacon

Baking Spray

Salt and Pepper

Instructions:

Begin my cooking your bacon and mashing your avocado.

Cut your cheese to the same size as the cookie cutters.

Heat a frying pan over a medium high heat.

Spray a large frying pan with baking spray and drop in two cookie cutters around 80mm in diameter.

Spay the inside of the rings with more spray and then break and egg into each cookie coutter.

Sprinkle with salt and pepper.

Pour water into the pan 5-6mm deep and then cover with a lid.

Cook for 3 minutes.

Add cheese to half of the cookie cutters and then replace the lid and cook for a further minute to melt the cheese.

Finally build, place an egg on the base, followed by the avocado and bacon and finally the egg with the cheese.

Sprinkle with chives to serve.
