Mini egg bacon pies: they are so quick and easy!

They cook in less time than a big pie as well! With a few ingredients, too good to not try them!

INGREDIENTS
 2 soft-boiled eggs;
 1 egg;
 45 g (1.5 oz) flour;
 2/3 cup milk;
 1/3 cup ham, minced;
 8-10 slices bacon;
 ½ cup shredded cheese;
 Scallions for garnish.
 
METHOD
  1.  Preheat oven to 190C/375F.
  2.  Brush two large ramekins with vegetable oil and place bacon slices, overlapping, to cover bottom and sides of the ramekin.
  3.  Add a layer of chopped ham and soft-boiled egg.
  4.  Whisk 1 raw egg with flour, milk and a pinch of salt. Pour over the egg and top with cheese and ore bacon. Repeat with another one ramekin.
  5.  Bake for 15 minutes and serve hot, topped with sliced scallions.
