Mini egg bacon pies: they are so quick and easy!

They cook in less time than a big pie as well! With a few ingredients, too good to not try them!
INGREDIENTS

2 soft-boiled eggs;
1 egg;
45 g (1.5 oz) flour;
2/3 cup milk;
1/3 cup ham, minced;
8-10 slices bacon;
½ cup shredded cheese;
Scallions for garnish.
METHOD
- Preheat oven to 190C/375F.
- Brush two large ramekins with vegetable oil and place bacon slices, overlapping, to cover bottom and sides of the ramekin.
- Add a layer of chopped ham and soft-boiled egg.
- Whisk 1 raw egg with flour, milk and a pinch of salt. Pour over the egg and top with cheese and ore bacon. Repeat with another one ramekin.
- Bake for 15 minutes and serve hot, topped with sliced scallions.
