Jalapeño Mac 'n' Cheese Fries

INGREDIENTS:4 cups macaroni
1 egg
4tbsp butter
1/4 cup flour
2 1/2 cups milk
1 pound sharp Cheddar, grated
Salt by the taste
1 1/2 cups flour (seasoned with salt, black pepper and cayenne)
2 eggs, beaten
1 bag jalapeño-flavored potato chips, crushed
2 cups vegetable oil (for frying)
METHOD:
Prepare classic mac and cheese by cooking macaroni for 7 to 8 minutes. Drain and set aside. In a large pan melt the butter and sprinkle in the flour. Whisk together over medium-low heat. Cook for a couple of minutes, pour in the milk, cook for about 5 minutes. Reduce the heat to low. Take 1/4 cup of the sauce and slowly whisk it together with the beaten egg, avoid cooking the eggs. Pour the egg mixture into the sauce, whisking constantly and add in the cheese. Season it.
Pour mac and cheese into a parchment-lined rectangular baking dish and press flat. Chill for 30 minutes or overnight.
By using a pizza cutter, cut chilled macaroni into fries size.
In a small bowl add seasoned flour. In another the beaten eggs and in a third add the crushed jalapeño chips.
Dip a mac 'n' cheese baton into the flour, then into egg, and lastly coat it with crushed chips.
In a saucepan, heat 2 cups vegetable oil and fry the coated macaroni until golden brown.
Serve fries alongside your favourite dressing.
