Zucchini egg cups: a healthy, simple and tasty way to enjoy breakfast

INGREDIENTS
Zucchini
Salt & pepper
Grated cheese
Egg
Cherry tomatoes

METHOD
1. Use a peeler to remove several thin slices/sheets from a zucchini.
2. Place on baking paper, add salt and wait for 1 hour.
3. Place two zucchini sheets in each hole of a muffin tray.
4. Add an egg, cherry tomatoes, grated cheese, salt and pepper.
5. Bake for 25 minutes at 180°C (356°F).
