published on 17 March, 2023 at 11:40
INGREDIENTS
400g (2 cups) sugar
240ml (1 cup) corn syrup
a pinch of salt
120ml (½ cup) water
225g (1 cup) butter
350g (2 ½ cups) peanuts
3g (1 tsp) baking soda
METHOD
1. In a large pot combine water, sugar, salt, and corn syrup. Place the pot over medium-low heat and cook, stirring, for 6-7 minutes.
2. Add butter into the pot and cook, stirring, for 15 minutes or until the caramel is 137 degrees.
3. Pour peanuts into the pot of caramel and continue cooking for 10 minutes or 151 degrees.
4. Finally, remove the pot from the heat and stir in the baking soda. When the caramel stops bubbling up, pour everything into a greased baking pan, covered with a piece of parchment. Let it set for around an hour in a cold place, then carefully remove it from the pan and break it into pieces.
