Ingredients:
SPONGE CAKE:
5 eggs
1 pinch of salt
60g sugar
60g sugar
95g "00" flour
3g baking powder
45g seed oil
55g milk
LEMON CREAM:
5 yolks
75g sugar
25g rice starch
Lemon peel
150g milk
150g cream
30g butter
50g lemon juice
300ml cream
20g sugar
Lemon peel
LEMON BATH:
Lemon juice
water
sugar

Directions:
1. Sponge cake: divide yolks and whites. Mix the egg yolks with sugar and salt. Beat the egg whites until stiff with another 60 g of sugar. Combine the two compounds and add flour, yeast, oil and milk. Pour the mixture onto a rectangular pan and bake at 340°F/170° for 30 minutes.
2. Lemon cream: heat up milk, cream, lemon zest and vanilla. Separately, mix the egg yolks with sugar, lemon juice and starch. Filter the milk and add to the mixture, let it thicken on the heat and add the butter. Whip the cream with sugar and lemon zest. Add to the cream and mix well.
3. Assemble the cake and serve this delight.
