Veggie rings: healthy, low carbs and delicious!

Crispy, fluffy & tender! They are all-natural, healthy rings made from fresh vegetables at home!

These rings are Crispy, Golden Brown, and Absolutely Delicious…but you don’t need ANY Oil to cook them!

INGREDIENTS

• Yellow pepper

• Eggplant

• Zucchini

• Onion

• 1 cup Bread crumbs

• ½ cup parmesan

• 2 tsp Garlic powder

• 1 tsp Paprika

• 1 tsp oregano

• 1 tsp basil

• 1 tsp salt

• Eggs

• 1 cup flour

• Cookie cutter

METHOD

Cut the stem of the yellow pepper and remove it along with the seeds.
Cut the pepper and the onion into slices.
Cut the zucchini and eggplant into slices then use a cookie cutter to make a hole in the slices to create
rings.
Mix in bread crumbs, parmesan, garlic power, paprika, oregano, basil, salt and pepper in a bowl.
Beat 3 eggs in a separate bowl.
Place a slice of the pepper in the flour, then in the egg and finally in breadcrumbs.
Place on a baking sheet and bake for 15 minutes at 220ºC (425ºF). Flip the rings halfway.
Repeat the step with onion, zucchini and eggplant rings.
