Avocado onion rings

Ingredients:
Guacamole:
2 avocados;
1/3 cup red onion, chopped;
1/3 cup tomatoes, chopped;
1 ½ tsp pickled jalapeno, minced;
1 tbsp lime juice;
1 tbsp parsley, chopped;
salt and pepper to taste.
Onion rings:

Instructions
Make guacamole by pureeing avocados. Add onion, tomatoes, jalapeno, lime juice and parsley. Season with salt and pepper to taste.
Cut peeled onion into about 2.5 cm (1 inch) rounds. Separate onion rings.
Fill each onion ring with guacamole and place a small cube of cheese in the middle.
For the dredging mix flour with spices, beat eggs with salt and pepper, combine breadcrumbs and chips (all in separate bowls).
Cover each onion ring with flour, dip into beaten egg and sprinkle with breadcrumbs and chips to cover completely.
Deep fry for 4-5 minutes or until golden and crispy. Transfer onto paper towels and season with an extra pinch of salt.
