Pesto onion rings

Ingredients:
3 purple onions;
¼ cup pesto;
200 g (7 oz) mozzarella, shredded;
2 cups breadcrumbs;
2 eggs;
1 cup flour;
vegetable for deep frying.

Instructions
Cut onion into 3 parts and separate onion rings from each other.
Pick up onion rings so inner one will be smaller and outer ring will be a little bit bigger.
Cover the inside part of bigger ring with a little bit of pesto sauce. Place it over smaller onion ring and fill the gap between ring with some cheese.
Dredge onion rings in flour, dip into beaten egg and cover with breadcrumbs. Repeat bitten egg and breadcrumbs coating for extra crispiness.
Deep fry onion rings in preheated oil for 3-4 minutes.
