Couscous and veggie balls: an easy and delicious recipe for your next dinner!

Tasty, healthy and easy to make. Have you ever tried preparing them like this?
INGREDIENTS
200g couscous
olive oil
250ml hot water
1 zucchini
1 eggplant
peas

DIRECTIONS
1. Pour the oil and water over the couscous and wait 5 minutes.
2. In a pan, cook the diced zucchini and eggplant together with the peas.
3. Add the Parmesan cheese, egg, diced provola and seasonings to the couscous and mix.
4. Add the cooked and cooled vegetables to the couscous mixture.
5. Shape the balls with your hand and cover them in breadcrumbs.
6. Deep fry them.
