Torta caprese recipe: the delicious Neapolitan dessert

Here is the recipe of torta caprese, an old Neapolitan dessert. It was born out of a mistake, but throughout the years it has become really popular. It's a delicious cake with a spongy texture. This dessert is also perfect for those who are intolerant to gluten due to the absence of flour, and to those who are intolerant to yeast, since baking powder is not included in the recipe.
INGREDIENTS
3 egg whites and 3 egg yolks
180g peeled and slightly toasted almonds
120g sugar (divided into 60 + 60)
150g butter, softened
150g dark chocolate

DIRECTIONS
Beat the egg whites with half the sugar, then refrigerate. Chop the almonds and melt the dark chocolate. Using a whisk, soften the butter, then add sugar and the egg yolks, one at a time. Add the almonds, then the chocolate and mix well. Add the egg whites, stir and pour into a pan. Bake at 180°C (360°F) for 35 minutes.
