Gingerbread Cookies

Ingredients: 420g flour
100g sugar
30g brown sugar
120g butter
1 egg
30g honey
20g maple syrup
3/4 tsp baking soda
2 tsp ginger
pinch salt
1 tsp cinnamon
1/2 tsp nutmeg
1 egg white
Mix the flour, baking soda, salt and spices.
Beat the butter and sugar until combine. Add the egg, honey and maple syrup.
Add flour mixture in a portions. When the dough is form, wrap it and put it in the fridge for 1 hour.
Roll out the dough on a lightly floured surface cut out the biscuits with a ginger-shaped mold. . Place the biscuits on a baking sheet, covered with parchment paper, overlap the feet and hands of the men, brushing them with egg white. Go back to the fridge for 30 min.
Bake at 170°C/340°F for 15 minutes.
