Chocolate cake: the easy eggless cake with smashed avocado

INGREDIENTS
2 tbsp of ground chia seeds
60ml (1/4 cup) of water
180g (1 1/2 cups) of flour
130g (1/2 cup) of light brown sugar
50g (1/2 cup) of cocoa powder
8g (1 1/2 tsp) of baking powder
2g (1/3 tsp) of salt
1 tsp of ground coffee
1 avocado
130ml (1/2 cup) of coconut milk
Vanilla extract
50g (1/4 cup) of dark chocolate
For chocolate ganache:
50g (1/4 cup) of dark chocolate
50g (1/4 cup) of peanut butter
METHOD
1. Make the chia eggs by combining ground chia seeds and water in a small bowl, then set aside.
2. In a bowl add the flour, sugar, cocoa powder, baking powder, baking soda, and salt and mix all dry ingredients.
3. Clean the avocado, cut it into small pieces, and pour it into the food processor. Add the coconut milk and vanilla essence and mix. Add the chia egg mixture and mix just a little to combine.
4. Pour the wet ingredients into the bowl of dry ingredients and stir with a spatula until just combined.
5. Pour the mixture into the cake mold (18cm - mold size) and level it up with the spatula. Bake in oven at 180°C/360°F for 35 minutes.
6. Combine the chocolate and peanut butter in a small bowl and transfer to the microwave for 2 minutes. Remove from the microwave and stir to combine.
7. Pour the ganache over the cake and level it up with the spatula. Cut on slices and serve.
