Vegetarian muffins: easy to prepare and delicious to eat!

INGREDIENTS
Butter
1 onion
Garlic
Carrots
Red pepper
Leeks
4 eggs
80ml (1/3 cup) milk
Parmesan
Salt
Black pepper
Extra virgin olive oil
 
METHOD
  1. Melt the butter in a frying pan. Then add grated garlic, carrot, onion, red pepper, leek, salt, pepper, and mix. Put in a bowl once cooked.
  2. Mix the eggs and milk in a bowl, add salt and pepper, then add the cooked vegetables and mix well.
  3. Brush some oil over the muffin tray then pour in the egg mixture. Cook for 15 minutes at 200ºC (392ºF).
