Vegetarian muffins: easy to prepare and delicious to eat!

INGREDIENTS
Butter
1 onion
Garlic
Carrots
Red pepper
Leeks
4 eggs
80ml (1/3 cup) milk
Parmesan
Salt
Black pepper
Extra virgin olive oil
METHOD
- Melt the butter in a frying pan. Then add grated garlic, carrot, onion, red pepper, leek, salt, pepper, and mix. Put in a bowl once cooked.
- Mix the eggs and milk in a bowl, add salt and pepper, then add the cooked vegetables and mix well.
- Brush some oil over the muffin tray then pour in the egg mixture. Cook for 15 minutes at 200ºC (392ºF).
