Bread potato toast: ready in 10 minutes in a pan!

A savory treat perfect to reuse stale bread! 

INGREDIENTS
8 bread slices
2 mashed potatoes
2 eggs
Diced tomato
Chopped green chili
Onion
Coriander
½ tsp black pepper
½ tsp salt
Oil
 
METHOD
  1. Add diced tomato, green chili and onion to a pan and fry. Add pepper, salt and mix. Add coriander.
  2. Peel two potatoes, cook and mash. Add the onion mixture to the mashed potato and add an egg.
  3. Cut circles out of sliced bread. Spread some potato mixture over one bread slice and place another slice on top. Soak the bread in beaten egg and fry.
