Savory buns: you can fill them as you wish!

INGREDIENTS
Dough:
wheat flour - 500 grams;
dry yeast - 14 grams;
warm milk - 250 milliliters;
sugar (to taste) - 50 grams;
salt - 1 teaspoon;
vegetable oil - 30 milliliters;
butter - 40 milliliters;
yolk - 2 pieces.
Filling:
cottage cheese - 400 grams;
raisins - 100 grams;
sugar (to taste) - 70 grams;
vanilla sugar - 10 grams;
corn starch - 15 grams;
protein - 2 pieces.
Additionally:
yolk - 1 piece;
milk - 1 tablespoon.
METHOD
- Mix the yeast with warm (36-40 degrees) milk, leave it for 5-7 minutes.
- In a separate bowl, mix the yolks, sugar, salt, vegetable oil and melted butter. Products should be at room temperature. Add the matching yeast. Mix thoroughly.
- Gradually introduce flour, sifting through a sieve. Do not pour all at once, since the flour is different and its amount may vary.
- If the dough begins to lag behind the hands, then remove the excess flour better. Knead with your hands for about 5 minutes. Put the dough in a bowl, cover with cling film and put in a warm place for 50-60 minutes to lift.
- We take cottage cheese for the filling not rubber, but not too wet. Add sugar, vanilla sugar and proteins, interrupt into a lush mass using a blender. If you use cottage cheese, then proteins are not needed here and mix with an ordinary fork.
- Add starch or flour at the end, it will take in excess moisture. Pre-pour raisins with boiling water and dry with paper towels, add to the filling and it is ready!
- We crush the approached dough and divide it into 8 parts. We roll each into a ball and cover it so that a crust does not appear on top.
- Roll each piece thinly, forming a rectangle. Divide it into two equal parts along.
- We put one half on the other, roll the edges even thinner, put the filling in the middle and close it inside.
- The remaining edges are cut into strips and intertwined (the video can be viewed in more detail). The ends of the strips are fixed on the bottom of the pies and laid out on a baking sheet with baking paper, leaving a distance.
- Leave the pies for 15 minutes before baking, be sure to cover. mix the yolk with milk, grease the cakes with cottage cheese and in the oven.
- Bake for 20 minutes at 180 degrees (time and temperature depend on your oven and the size of the pies).
