Sweet potato baskets with egg: a delicious idea ready in no-time!

INGREDIENTS
 Large sweet potato
 Baby spinach leaves
 6 eggs 
Chives 
Olive oil
 Salt & p

METHOD
  1. Line the greased muffin holes with sweet potato and bake for about 8 - 12min 180°C / 350°F.
  2. Take it out and add some baby spinach and crack an egg to each hole. Sprinkle with chives, salt&pepper. Bake for another 8 - 12min 180°C / 350°F.
