Vegetable cake: tasty, colorful and easy to make!

INGREDIENTS
• Eggplant
• Pepper (yellow and red)
• Zucchini
• Puff pastry
• Cream Cheese
• Cooked ham
• Mozzarella
 
METHOD
  1. Cut the pastry puff into 2 cm strips vertically. Place one strip horizontally along one edge and above all
    others.
  2. Pick up one strip and fold it over in the opposite direction, then do the same with the 3rd strip, then the
    5th strip, etc. (alternating each time).
  3. Cut the vegetables into thin strips.
  4. Place strips of yellow pepper along the pastry puff. Put back the strips that you had picked up over the
    pepper, then pick up the ones that had been left in their place.
  5. Repeat the steps with the red pepper, eggplant, and zucchini until a lattice pattern is made with the
    entire puff pastry.
  6. Place another strip horizontally along the final edge.
  7. Spread some cream cheese over another square of puff pastry, then add ham and fresh mozzarella.
  8. Place the puff pastry lattice layer on top.
  9. With a fork press to join the two layers.
  10. Brush beaten egg all over the puff pastry and bake for 40 minutes at 180ºC (356ºF).
