Orejas de Carneval: the Spanish puffy and light fritters!

INGREDIENTS
500g (4 cups) of flour
100g (1/2 cup) of sugar
14g (1 tbsp) of baking powder
a pinch of salt
2 eggs
100ml (2/5 cup) of water
50ml (1/4 cup) of sweet anise
50g of butter
Orange zest
Lemon zest
Vegetable oil
Sugar

METHOD
1. Mix flour, sugar, baking powder, and salt in a bowl very well.
2. Make a hole in the middle of the mixture and add butter, eggs, water, anise, lemon, and orange zest, and mix until all the ingredients are integrated.
3. Form a roll with the dough and cut it into slices. Roll out each slice very thin then cut it into irregular shapes.
4. Fry in very hot vegetable oil until golden.
