Puffed potatoes: balloon-like cylinders of fried potato that had nothing inside but caverns of air!

Pommes soufflées are a sophisticated variety of French fried potato by which slices of potato are fried twice. The potato slices puff up into little balloons during the second frying and turn golden brown!
INGREDIENTS

Potatoes
Egg
Potato starch
Oil
METHOD
- Cut very thin potato slices. Grease one part of slices with egg white and another with potato starch.
- Cut in shapes you like.
- Overlap the potatoes slices. Put them into hot oil.
- Put out when ready.
