INGREDIENTS

3 medium potatoes, boiled;
50g (3 tbsp) cornstarch;
15g (2 tbsp) parsley;
Salt and pepper;
1 tsp paprika;
1 egg;
110g (1 cup) breadcrumbs;
15g (1 tbsp) parmesan.

METHOD

Mash boiled potatoes and combine with cornstarch, parsley, paprika, salt, and pepper.
Cut the potato dough into quarters and roll each into a log.
Press the log with a form to form a pattern as shown on the video. Cut each log into 4 pieces.
Whisk egg with a pinch of salt.
Separately combine breadcrumbs and parmesan.
Cover each potato nugget with egg, then cover with breadcrumbs.
Cook in preheated oil for 3-4 minutes.
