Full English Breakfast Baked Potato

Ingredients:
2 Large Baking Potatoes.
Olive Oil.
Salt.
150g Cheddar Cheese: Grated.
1 Small Tin Baked Beans.
100g Diced Pancetta: Lightly fried.
100g English Sausage: Cooked.
50g Diced Mushroom.
2 Rashers Bacon: Cooked.
1 Tsp Chopped Parsley
Instructions:
Take the baked potatoes and rub with a little of olive oil and salt before wrapping in tin foil.
Bake at 180°C or 350°F for 90 minutes.
Allow the potatoes to cool a little and then cut in half, scoop out most of the insides of the potatoes to form a boat.
Add a little cheese to the base of the potatoes, followed by a spoonful of beans, a sprinkle of pancetta, some sausage and dice mushroom.
Add another layer of grated cheese and then crack an egg into each potato.
Season with salt and then add more cheese.
Bake at 160°C or 350°F for 35-40 minutes.
Sprinkle with crispy bacon and parsley and serve hot.
