Stuffed potatoes:
Ingredients:
5 potatoes, peeled;
10 slices bacon;
50 g (1.7 oz) cheddar cheese;
50 g (1.7 oz) mozzarella cheese;
5 eggs.

Instructions
Preheat your oven to 180C/350F.
Using an apple corer, remove insides from each potato without poking it through (making a potato cup).
Wrap each potato cup in bacon (use toothpicks to secure it if needed). Fill potato with both kinds of cheese.
Bake for 35 minutes, remove from the oven, crack an egg into each cup and return into the oven for 5-7 minutes (or until the yolk is set).
Remove toothpicks and serve sprinkled with chopped greens.

These stuffed Hasselback potatoes are a tasty and unique recipe that will surprise you dinner guests with just a few simple ingredients. All you need to do is rinse the potato, peel it and cut it into two parts. Make some deep slices in the potato, making sure not to cut all the way through. Season with salt and pepper and bake at 180°C for 30/40 minutes. Once the baking time is over, stuff with speck and cheese and put the potato back into the oven and bake until the cheese has melted!

Hasselback BBQ Potatoes:
Ingredients:
2 Large Potatoes
250g Good Melting Cheese: Gouda is good.
Olive Oil
300g Bacon (pre cooked)
Red and Green Chiles (sliced)
Sour Cream
Chives
Salt
Instructions:
Place two wooden spoons on your chopping board and then place a potato between them.
Cut slices across the potato about 7-10mm wide.
Place a piece of cooked bacon between each slice.
Then alternate between slices of red and green chili between the slices.
Drizzle the potatoes with olive oil and then generously season with salt.
Place on a medium hot grill for an hour.
Now slice the cheese and place a slice of cheese between each slice of potato and grill for a further 15 minutes.
Serve with a nice dollop of sour cream and chopped chives.
