Do you love potato fries? Are you a fan of mashed potatoes? Then you’ll love these potato fritters—a delicious twist on traditional French fries and mashed potatoes. Made in a similar way to potato croquettes, mashed potatoes are mixed with eggs, breadcrumbs, parmesan, and seasoning, and fried until golden and crispy. The result? Mashed potato fritters that are crispy on the outside and soft on the inside. Serve them with your favorite sauce as a quick snack or an appetizer. Our personal favorite? Ketchup…because what goes better with crispy potatoes? Your guests, kids, and picky eaters will all love these crispy potato fritters!

Potato Fritter Ingredients

  • Potatoes – for best results, use Yukon Golds, red potatoes, or russet potatoes—these will give you the fluffiest potatoes with a crispy texture
  • Eggs – use large, free-range eggs
  • Herbs – fresh parsley adds flavor; can be substituted with cilantro
  • Oil – use a neutral oil suitable for frying
  • Seasoning – salt, pepper, and garlic is all you need, but feel free to use the spices in the recipe, or make your own blend. You can even use store-bought blends like fajita or taco seasoning, Italian seasoning, or Cajun spice.
  • Parmesan – adds flavor
  • Breadcrumbs and flavor – together they act as binding ingredients

Tips

You might be tempted to use a stick blender or food processor to mash the potatoes, but for this recipe, it’s not recommended. The potatoes might be smooth, but they will also become sticky with a tough texture. Rather use a fork or masher to mash until smooth.

Allow the potatoes to steam a bit until completely dry. They should be as dry as possible.

Add any spices you like to the mashed potato: paprika, Cajun or Taco seasoning, white pepper, or even fresh herbs.

Add small pieces of crispy fried bacon for a meaty, smoky flavor.

You can use this recipe to make croquettes too. Bread the mashed potato sticks with flour, eggs, then breadcrumbs. Fry them, or bake them in the oven at 400°F/200°C for 15 mins until cooked. Fill the croquettes with bacon or cheese.

Drained the potato fritters on a paper towel-lined plate to prevent them from being too greasy.

To make sure they’re cooked evenly, use a cookie scoop to measure out equal amounts of the mashed potato mixture.

How to Store Potato Fritters

The Potato Fritters can be stored in the refrigerator for up to 5 days. Just reheat them in the oven or Airfryer for 10 minutes, as they might become soggy in the microwave.

Can You Freeze Potato Fritter

You can also freeze them in the freezer for up to 3 months. Place the uncooked potato fritters on a baking sheet and freeze for about 2 hours. Transfer the fritters to a Ziploc bag and freeze for up to 3 months. Cook directly from frozen.

Can I Make Potato Fritters in the Airfryer?

To make the potato fritters in the Airfryer, coat them lightly with spray oil. Place in the Airfryer basket and air fry for 12 minutes at 400°F. You can also bake them at 400°F. Turn on the broiler for the last few minutes to ensure extra crispiness.

Instructions

Boil the potatoes in a pot of hot water.

Place the cooked potatoes in a large mixing bowl and mash.

Add the eggs, parsley, salt, parmesan, bread crumbs, flour, garlic, and pepper.

Knead to mix all the ingredients well.

Take small portions of potato dough and form into long fritters.

Lower the potato fritters into hot oil and fry until golden.
