published on 15 December, 2020 at 16:38
Forget the usual pie, this recipe is really unique!
INGREDIENTS
INGREDIENTS
350g (2.8 cups) flour 00
150g (0.6 cup) cold butter (keep it in the freezer for 10 minutes)
150g (1.2 cups) of sugar
2 medium sized eggs
a pinch of salt
5g (1 tsp) baking powder
10g (2 tbsp) of lemon peel
150g (0.4 cup) of strawberry jam
150g (0.4 cup) of apricot jam
150g (0.4 cup) red fruit jam
METHOD
- Combine flour, baking powder, sugar, then grate the cooled butter into the mixture and add a pinch of salt. When you have combined all the ingredients, add two eggs and knead the dough. Wrap the dough in plastic wrap and leave in the fridge for half an hour.
- Divide the dough into two parts, stretch the first part into a circle of 25 cm on baking paper and place in a baking tin. Roll out the rest of the dough, then return to the fridge for another half hour.
- Cut strips of dough 3 cm wide for the first round and 2 cm to fill the mold, 8 cm long. Wrap the strips and fill the mold.
- Then, with the rest of the dough, circle small circles and line the edges of the pie. Fill the circles with strawberry, apricot and forest fruit jams, and fill the gaps only with apricot jam.
- The pie is baked statically at 180 degrees for 40 minutes.
