Steak Onion Cups

Ingredients:
2 Large Onions
60g Flour
1 Tbsp Baking Powder
1 Tbsp Smoked Paprika
1 Tbsp Garlic Powder
1 Tsp Salt
½ Tsp Salt.
1 Egg
180ml Milk
1 Tbsp Oil
450g Shaved Steak
150g Breadcrumbs
More Salt and Pepper
Sauces and Fresh Parsley to Serve
Instructions:
Peel and top and tail the onions and then cut into three pieces.
Separate the two end pieces into ‘cups’ and roughly chop the centre of the onion and any left over onion from making the cups.
Mix together the flour, baking powder, paprika garlic powder, salt and pepper.
Dredge the onion cups in this flour mix and set aside.
Add the egg and milk to the flour mix, combine to form a batter then set aside.
Heat the oil in a large frying pan and cook the chopped onions for 5-7 minutes until they start to colour.
Add the steak, season with salt and pepper and cook over a high heat for 3-4 minutes or until cooked to your liking.
Dip the onion cups into the batter and then into the breadcrumbs and coat.
Batch fry the onion cups in hot oil at 180C or 350F for 4-5 minutes until golden and transfer to kitchen paper.
Serve the cups stuffed with the steak and add sauces of your choice and chopped herbs.
