Blooming onions

Ingredients:
10-15 pearl onions, peeled;
1 egg;
¼ cup cream;
½ cup all-purpose flour;
½ cup cornmeal;
1 tsp paprika;
1 tsp chili powder;
1 tsp salt;
vegetable oil for frying.

Instructions
Preheat oil to 350F/180C.
Make cuts in peeled onions 2/3 way down to the root part without cutting trough. Carefully separate onions “leaves” with your fingers to make “flower”.
For the dredging mix both flours with spices and salt. Separately whisk together egg and cream.
Dip onions into the egg mixture then dredge in flour. Repeat if you want extra crispy and thick exterior.
Fry onions in batches for 3-4 minutes. Sprinkle with some extra salt before serving with your favorite sauce.
