Blooming Potatoes

Ingredients:
Potatoes roughly 200g each.
Olive Oil
Salt
Pepper
1 Tbsp Flour per potato
Oil for Frying
Toppings Suggestions
Beef Ragu with Parmesan Cheese
Avocado Smash with Red Onion
 
Instructions:
Take a potato and cut around 1/4th to 1/5th off the top.
Now cut three concentric circles in the cut face of the potato approximately 1.5cm deep being careful not to cut all the way through the potato.
Flip the potato upside down and make a series of cuts 1-1.5cm deep and 0.5cm apart around the edge of the potato.
Brush the cut face of the potato with olive oil and season with salt and pepper.
Bake the potatoes in the oven at 180°C or 350°F for an hour and allow to cool a little.
Sprinkle the cut face of the potato with flour and then deep fry in oil at 180°C or 350°F until golden brown and crispy.
Top with the garnish of choice and serve hot.
