Baked Chicken Meatballs

Total Time: 30 minutes

Ingredients:
1 lb ground chicken
1 egg
1/2 cup Italian seasoned breadcrumbs
1/2 cup grated mozzarella cheese
2 Tbsp minced onion
1/2 tsp garlic powder
3/4 tsp salt
1/2 tsp red pepper flakes
1/2 tsp black pepper
1 avocado, peeled, pitted and cubed

Method:
Preheat oven to 400 degrees. Lightly grease a baking sheet lined with aluminum foil with cooking spray.
In a large bowl, stir together all ingredients except for the avocado until well combined.
Scoop approximately 1 to 2 Tbsp of the mixture into your hands. Form a small round disk and place one to two cubes of avocado on the center. Fold up the edges around the avocado, pinching closed to seal.
Place seam-side down on the greased baking sheet. Repeat with remaining chicken mixture and avocado.
Spray tops of the meatballs lightly with cooking spray.
Bake for 20-25 minutes. Cool and serve with marinara sauce.
