Red lentil pancakes: quick and easy salty finger food!

They are light and delicious, perfect for dinner!
INGREDIENTS
4 tbsp of red lentils
375ml of water
3 tbsp of olive oil
1 tsp cumin
1 tsp of thyme
1 tsp of salt
Cream Cheese to serve
Smoked Salmon to serve
METHOD
- Add red lentils to a bowl and cover with 250ml water. Mix the lentils around with a fork and then leave to soak for 4-6 hours
- Drain the lentils and add to a bowl with 125ml water, 3 tablespoons of olive oil, cumin, thyme, and salt.
- Blend the lentils with a stick blender until a paste is formed.
- Place a frying pan on medium to high heat and brush with olive oil.
- Ladle the mixture into the pan to form round pancakes and fry for 2-3 minutes per side
- Serve with smoked salmon and cream cheese.
