Brioche roses: fluffy and delicious!

An incredible method to make the best brioches ever!
INGREDIENTS
Dough:
2 eggs
2 tbsp sugar
150ml (3/5 cup) warm milk
150ml (3/5 cup) warm water
7g dry yeast
½ tsp salt
80ml (1/3 cup) vegetable oil
600g (4 3/4 cups) flour
Filling:
300g ricotta cheese
1 egg
1 tbsp sour cream
chocolate chips
METHOD
- Mix the eggs, sugar, salt, milk, water, and oil in a bowl.
- Add the flour little by little until you have a dough. Cover with cling film and let it rest for 2 hours.
- Mix ricotta cheese, an egg, and sour cream in a bowl.
- Divide the dough in two and flatten it very well with a rolling pin.
- Use a circular cookie cutter and make several medium and slightly larger circles.
- Place several medium circles around the top of a glass, forming a rose. Use the big one as a base. Flip the glass over and place each rose on a baking sheet. Fill the center with the ricotta cheese mixture and add chocolate chips. Brush the buns with egg.
- Bake at 200°C (392°F) for 25 minutes.
