Ricotta squares: easy and very quick to prepare!

A delicious treat that everyone will love!

INGREDIENTS
180g (1 1/4 cup) of flour
110g (1 cup) of almond flour
5g (1 tsp) of baking powder
1/2 tsp of salt
200g (1 cup) of sugar
100g (1/2 cup) of butter, softened at room temperature
4 eggs
400g (1 3/4 cups) of ricotta
Zest and juice of 3 lemons
10ml (2 tsp) of vanilla extract
Powdered sugar

METHOD
  1. In a large bowl, using a handheld electric whisk, whisk together the sugar and butter until light and fluffy, add the eggs and continue to whisk until frothy and smooth.
  2. Mix the lemon zest, juice, vanilla, and ricotta together, add that in along with all the dry ingredients, and whisk long enough just to incorporate everything together.
  3. Pour batter into the prepared pan and bake in the oven at 180°C/356°F for 45 minutes.
  4. Cut on squares and decorate with powdered sugar.
