Brioche with chocolate chips: how to make it very fluffy and fragrant!

The secret to make a super fluffy brioche! 
 
INGREDIENTS
Bread:
200 ml warm milk
100 ml warm water
50 ml vegetable oil
50 g margarine
600 g flour
2 tbsp semolina
100 g sugar
2 eggs
Salt
7 g dry yeast
Egg yolk
Kefir
 
Filling:
Chocolate chips
 
METHOD
  1. Add melted margarine, oil, sugar and mix in a bowl. Add eggs, salt, milk, water and mix again.
  2. Add the yeast and mix.
  3. Mix semolina and flour in a bowl. Add to the previous mixture.
  4. Mix well until you get around the dough.
  5. Cover with cling film and let it rest for an hour and a half.
  6. Divide the dough into two balls. Knead for a few minutes then cover with cling film and let it rest for 15 minutes.
  7. With a rolling pin, flatten each ball of dough into a rectangle.
  8. Smear butter over the entire surface of the rectangle and sprinkle with sugar.
  9. Add chocolate chips at one end. Fold the dough in two. Cut strips from the middle of the fold with a pizza cutter. Twist the strips to make a braid pattern. Roll the dough and leave the braids on top.
  10. Place on a baking tray and let stand for 15 minutes.
  11. Mix the egg yolk and kefir and cover the bread with the mixture. Bake at 160 ° C (320 °) for 30 minutes.
