Brioche with chocolate chips: how to make it very fluffy and fragrant!

The secret to make a super fluffy brioche!
INGREDIENTS
Bread:
200 ml warm milk
100 ml warm water
50 ml vegetable oil
50 g margarine
600 g flour
2 tbsp semolina
100 g sugar
2 eggs
Salt
7 g dry yeast
Egg yolk
Kefir

Filling:
Chocolate chips
METHOD
- Add melted margarine, oil, sugar and mix in a bowl. Add eggs, salt, milk, water and mix again.
- Add the yeast and mix.
- Mix semolina and flour in a bowl. Add to the previous mixture.
- Mix well until you get around the dough.
- Cover with cling film and let it rest for an hour and a half.
- Divide the dough into two balls. Knead for a few minutes then cover with cling film and let it rest for 15 minutes.
- With a rolling pin, flatten each ball of dough into a rectangle.
- Smear butter over the entire surface of the rectangle and sprinkle with sugar.
- Add chocolate chips at one end. Fold the dough in two. Cut strips from the middle of the fold with a pizza cutter. Twist the strips to make a braid pattern. Roll the dough and leave the braids on top.
- Place on a baking tray and let stand for 15 minutes.
- Mix the egg yolk and kefir and cover the bread with the mixture. Bake at 160 ° C (320 °) for 30 minutes.
