Croque Monsieur: the french toast with a unique taste!

INGREDIENTS
8 slices of sandwich bread
100g baked ham
Cheese
1 egg
For the sauce
60g (1/4 cup) of butter
40g (1/4 cup) of flour
490ml (2 cups) of milk
Salt
Pepper
90g (1 cup) of parmesan
100g of cheese
60ml (1/4 cup) of fresh cream
3 egg yolks
METHOD
1. In a saucepan, heat the butter and when melted add the flour mix well and add the milk and whisk well until very smooth. Season with salt and pepper.
2. Add the parmesan and cheese and cook the sauce for 10 minutes. Add the cream and quickly mix in the egg yolks.
3. Transfer the sauce to the bowl, cover the with plastic wrap and refrigerate for a few hours to let the sauce solidify.
4. Place one slice of the lightly toasted bread on a cutting board and add a little sauce. Add the ham slice on top of the sauce, add more sauce and add a little more cheese.
5. Add a little sauce on another slice of the bread and add it on top of the previous one and squeeze the sandwich. Add a couple of tablespoons of the sauce on the top of the sandwich.
6. Bake in the oven at 180°C/360°F, or until golden brown.
7. For a Croque Madame just place a cooked sunny side egg on top.
